Fennel Apple Slaw with Honey Lime Vinaigrette

Here is a fast and easy autumn salad. It is both refreshing and satisfying. The coriander gives a slightly floral accent. Use honey or allulose syrup and lemon or lime juice; it will still be appetizing and just a tinge of sweetness.

INGREDIENTS:

1 tablespoon avocado oil

½ teaspoon kosher salt

¼ teaspoon ground coriander

1 teaspoon Dijon mustard

2 tablespoons fresh lime juice

½ teaspoon honey

1 fennel bulb, finely shredded on a mandoline

1 apple, finely sliced on a mandoline, then cut into matchsticks

1 carrot, finely sliced on a mandoline, then cut into matchsticks

Reserved fennel fronds or dill for garnish

DIRECTIONS:

In a small jar, place the oil, salt, coriander, mustard, lime juice, and honey. Shake vigorously.

Toss the fennel, apple, and carrot with the vinaigrette in a mixing bowl, then place in the refrigerator for 1/2 hour.

Plate the salad and garnish with the fronds or dill.
