Asian Pear and Fennel Salad

Years ago, I planted an espalier of Asian pears that produces four varieties. This year was a bumper crop with sweet, delicious pears. This is one of the ways I am using them this year. The salad is refreshing and crisp. I use a pear-infused white balsamic vinegar, although white balsamic vinegar is an acceptable substitute.

INGREDIENTS:

1 fennel bulb, halved

1 large or 2 small Asian pears, quartered, cored

1 teaspoon lemon juice

2 tablespoons extra virgin olive oil

1 tablespoon pear vinegar or white balsamic vinegar

2 teaspoons fresh tarragon, chopped

1 ½ tablespoons pecorino cheese, finely grated

2 tablespoons hazelnuts, coarsely chopped

DIRECTIONS:

Thinly slice the fennel (crosswise) and Asian pears on a mandolin. Toss with the lemon juice.

In a small jar, combine the olive oil, vinegar, and tarragon. Pour over the fennel and pears. Place on a platter or four individual plates. Top with cheese and hazelnuts. Serve immediately.
