Whipped Feta Dip with Pistachios, Tart Cherries, and Honey

Are you looking for that party dip that is sure to please and refreshingly different? This recipe may just fit the bill. There are several whipped feta dip recipes. What makes this one different is the extra step to make it smooth rather than crumbly. Then the Mediterranean topping adds a dash of exotic with its cherry, pistachio, honey, and rosemary water. All that is needed is the accompanying crudité, bread, or crackers.

INGREDIENTS:

Feta Dip

7 ounces feta cheese

½ cup full-fat Greek yogurt

1 small clove garlic, peeled, smashed, and minced

2 tablespoons extra-virgin olive oil

Pistachio, Cherry, Honey Topping

¼ cup tart, dried cherries

½ cup filtered boiling water

½  teaspoon rosewater

¼ cup roasted pistachios, finely chopped

2 tablespoons honey, more for drizzling if desired

DIRECTIONS:

Feta Dip

1.     In a small food processor or an immersion blender, combine the cheese, yogurt, and garlic until smooth. Drizzle in the olive oil until well blended and somewhat smooth.

2.     Pass through a fine-mesh sieve for a smoother texture. Taste, Think, Transform with kosher salt if needed. (Feta is a very salty cheese and may not need any salt for this dip. Use your judgment, and if adding salt, do so a few grains at a time.)

  Pistachio, Cherry, Honey Topping

1.     Pour the boiling water and rosewater over the dried cherries in a heat-proof bowl, cover, and rehydrate for fifteen minutes. Thoroughly drain the cherry mixture and finely chop.

2.     Mix the chopped cherries, pistachios, and honey together.

Finishing

1.     Spread the feta dip in a shallow, wide serving bowl. With the back of a spoon, create swirls in the dip.

2.     Spoon the pistachio cherry topping over the top. Drizzle extra honey if desired. Serve at room temperature with fresh vegetables, bread, and/or crackers.
