Green Beans with Bacon, Sweet Onion, and Tomato

Nothing tastier than just picked green beans in the summer! Unless, of course, one chooses to enhance the flavor with bacon, sweet onion, and garden-fresh tomatoes. It could not be more simple or more simply divine!

INGREDIENTS:

1 pound green beans, trimmed

2 tablespoons extra virgin olive oil

2 thick strips of sugar-free, uncured bacon, diced

1 medium sweet onion (Walla Walla), medium diced

2 Roma tomatoes, cored, medium diced

Kosher salt to taste

DIRECTIONS:

1.     Bring a large pot of filtered water to a boil. Add the green beans. Bring back to a boil. Simmer until tender to the bite. (Tenderness in beans will vary according to varieties and age at harvest.) Drain and reserve warm.

2.      Meanwhile, heat a large sauté pan. Add the olive oil and bacon. Sauté until the bacon begins to brown on the edges. Add the onion and continue to sauté until softened. Finally, add the tomatoes and green beans. Heat thoroughly. Taste, Think, Transform with kosher salt. Serve warm.
