Sugar-Free Tomato Poblano Jam

Tomatoes are botanically deemed fruit; however, we often use them like vegetables. However, this jam is a different way to enjoy this fruit. Home-grown vine-ripened is a great ingredient, but heirloom and store-bought vine-ripened tomatoes will do nicely. The tomatoes make this jam balanced and sweet. The poblano, cinnamon, and cloves add a bit of spiciness. The allulose and brown swerve sweeten this jam without sugar. Serve on toast or as a cheese accompaniment.

 

1 cup

INGREDIENTS:

1 pound ripe tomatoes, cored, chopped

½ cup allulose

2 tablespoons brown swerve

1 tablespoon apple cider vinegar

1 teaspoon fresh ginger, peeled, grated

⅛ teaspoon ground cinnamon

Pinch ground cloves

½ teaspoon sea salt

½ small poblano pepper stemmed, seeded, minced

DIRECTIONS:

  1. Combine all the ingredients in a saucepan over medium-high heat. Bring to a boil, stirring occasionally, then reduce to a simmer.

  2. Simmer until thickened, about forty-five minutes to one hour, and stir often, especially towards the end. Taste, Think, Transform with salt and/or apple cider vinegar. Cool to room temperature. Store in a glass jar refrigerated.
