Cuban Orange Pork on Mango Salad With Sour Orange Vinaigrette

INGREDIENTS:

Vinaigrette:

4 tablespoons avocado oil

1 tablespoon orange muscat champagne vinegar (Trader Joe’s)

1 tablespoon lime juice

1 teaspoon honey

¼ teaspoon Kosher salt

Salad:

1 mango, peeled, seeded, diced

1 avocado, peeled, seeded, diced

3 radishes thinly sliced

3 baby sweet peppers, seeded, thinly sliced

4 cups assorted baby lettuce

2 cups shredded Cuban Orange Pork Shoulder, shredded*

DIRECTIONS:

  1. Toss all vinaigrette ingredients together in a small jar.

  2. Toss the baby lettuce with the vinaigrette. Place on four chilled plates or one large platter. Top with the mangos, avocados, radishes, and peppers. Briefly heat the shredded pork in the microwave. Place on top of the salad(s). Serve immediately.
