Fava Bean Toast with Garden Cherry Tomatoes

Move over avocado toast! The earthy flavor and bright green color of fava bean purée lends itself to a marvelous topping for crisp hearty whole-grain toast. Top with acidic cherry tomatoes and sweet balsamic vinegar to lighten. Finish with a flourish of flaky sea salt and black pepper. Now bite into multiple bursts of flavors and textures. The fava bean purée may also be used as a dip for your favorite chips.

It is certainly a wonderful source of plant protein for those on a vegan or vegetarian diet. Add to that a daily source of whole-grain toast, and tangy cherry tomatoes for a complete meal.

INGREDIENTS:

2 cups shelled fresh fava beans, about 2-pound fava bean pods (or 14 ounces frozen beans)

2 large garlic cloves, minced

1 ½ teaspoon fresh rosemary, minced

½  cup extra virgin olive oil, divided

½ teaspoon sea salt

4 thick slices hearty whole grain bread

8 cherry tomatoes, sliced

1 teaspoon balsamic vinegar or balsamic glaze

¼ teaspoon flaky salt

Fresh ground black pepper to taste

DIRECTIONS:

1.    Prepare an ice-water bath in a large bowl. Bring a large pot of water to boil. Add the fava beans, bring back to a boil, and blanch for three to four minutes or until softened. Remove with a slotted spoon to the ice water bath. When the fava beans are cool, lift the beans with a slotted spoon to a colander and drain. Peel and discard the tough outer skins. If using frozen do not blanch, just remove outer skins.

2.     Heat oil in a cast-iron pan. Add the garlic and rosemary. Cook for one minute before adding the beans and salt. Cook and stir beans for ten minutes or more until the beans are soft. Remove from the heat.

3.     Purée the beans in a food processor.

4.      Toast the bread. Spread the beans on the toast. Top with the sliced tomatoes. Drizzle with the vinegar or glaze and sprinkles with the flaky salt and pepper. Enjoy warm.
